I love this clean chicken salad from Whole Foods, and it’s a fantastic, easy meal for me during my *modified* carb cycling. I modified it slightly to cut back on the sugar intake, and you can certainly use regular mayonnaise instead of the Veganaise (which I purchase from Trader Joe’s or Sprouts). The flavor is awesome (which is key, to keep my diet interesting), and it keeps well for quite a few days. Just chill your ingredients, and toss!
Dressing
1 c. Veganaise
4 tsp. Apple Cider Vinegar
3 tsp. honey
Salt and pepper, to taste
2 teaspoons poppy seeds (optional)
Salad
2 lbs. boneless, skinless chicken breasts, cooked as desired, diced
2 c. seedless grapes, halved
3 stalks celery, thinly sliced
3/4 c. pecan pieces (optional)
